Lentil Soup with Side Salad

This lentil soup is filled with super beneficial vegetables and spices! Spices are a great way to incorporate flavor, but also great health benefits into your diet! Cumin contains antioxidants, which can help prevent heart disease, and high blood pressure. 


  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt to taste
  • Mixed greens
  • Cherry tomatoes
  • Cucumber


  1. In a large pot, sauté onion and garlic in olive oil until soft.
  2. Add chopped carrots and celery and sauté for a few minutes.
  3. Add lentils, vegetable broth, and spices to the pot.
  4. Bring to a boil, then reduce heat and let simmer for 30 minutes or until lentils are tender.
  5. Season with salt to taste.
  6. Serve with a side salad of mixed greens, cherry tomatoes, and cucumber.
