Lentil Soup with Side Salad
This lentil soup is filled with super beneficial vegetables and spices! Spices are a great way to incorporate flavor, but also great health benefits into your diet! Cumin contains antioxidants, which can help prevent heart disease, and high blood pressure.
Ingredients:
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup lentils
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt to taste
- Mixed greens
- Cherry tomatoes
- Cucumber
Directions:
- In a large pot, sauté onion and garlic in olive oil until soft.
- Add chopped carrots and celery and sauté for a few minutes.
- Add lentils, vegetable broth, and spices to the pot.
- Bring to a boil, then reduce heat and let simmer for 30 minutes or until lentils are tender.
- Season with salt to taste.
- Serve with a side salad of mixed greens, cherry tomatoes, and cucumber.
