Ginger Tzatziki Chicken Wraps

Ingredients:
For the Marinade:
- 2 lbs Chicken, diced
- 1/4 Cup Soy Sauce
- 2 tsp Ginger Powder
- 4 tsp Olive Oil
- 1/4 tsp Pepper
For the Tzatziki Sauce
- 1/4 Cup Cucumbers, finely diced
- 1 Clove Garlic, minced
- 1/2 tsp Dill, dried
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/2 Cup Plain Greek Yogurt, low-fat
For the Wraps:
- 6 cups Whole Romaine Leaves
- 3/4 cup Cucumbers, sliced
- Kabob Sticks
Directions:
- Mix marinade ingredients in a bowl or zip lock bag and allow chicken to marinate for at least 30 min.
- Mix Tzatziki Sauce ingredients in a bowl and allow flavors to marry together for an hour or two.
- Once marinaded, assemble chicken on kabob sticks and grill until fully cooked.
- Place several cucumber slices in lettuce boats followed by the chicken kabob and top with Tzatziki sauce.
- Plate and Enjoy!
